A whole chicken (cut up) or 4 – 6 lbs. of any part of chicken you preferred.
5 – 6 cloves of Garlic (finely chopped)
2 tbsp Coriander seeds (finely crushed)
1 tbsp Whole Black pepper (finely crushed)
3-4 Lemongrass stalks (crushed)
Step one – Mix the marinating sauce
Use mortar & pestle ( or use a blender)to crush garlic, coriander seeds & black pepper (in order) until blended. Then follow with the remaining ingredients (exclude lemongrass), mix well together.
Step two – Marinate the chicken:
Combine all of the marinating sauce into the chicken bowl, including crushed lemongrass. Mix everything together. Cover and let the chicken marinate in refrigerator for a couple hours or overnight.
Tip**The longer you marinate, the tastier the chicken.
Step three – Start cooking:
Preheat oven to 375˚ F. Place chicken on a pan (skin side up first). After 30 minutes, flip the chicken and let it cook for another 15 minutes. Check to ensure the chicken is fully cooked. (Internal temp. of chicken should be 165˚ F).
Tip**Prevent overcooked chicken breast by removing them from the pan 10 minutes earlier than the rest of the chicken.
After chicken is cooked, let it rest on the pan for another 5 minutes, then it’s ready to be served! Enjoy!
